Description
Prepare the dough according to the step‑by‑step instructions, shape the bagels—simits, dip them sequentially in a sweet solution, then in toasted sesame seeds, let them proof for 20 minutes and bake for 20 minutes at 200 °C. They can be served with tea or coffee.

Prepare the ingredients according to the list for this recipe.

Pour half a cup of warm water into a bowl, add the yeast, salt, and sugar.

Mix the yeast with water and add 2 tablespoons of flour from the total amount, stir until smooth – this will be the starter.

Place the starter in a warm place for 15 minutes to “wake up” the yeast.

Add vegetable oil to the pre-ferment.

Sift the flour into a bowl.

Knead the dough by hand for 10 minutes.

Grease the rim of the bowl with vegetable oil, place the dough in it, cover with plastic wrap or a towel, and let the dough rise in a warm place for 1.5–2 hours.

While the dough is proofing, toast the sesame seeds in a dry pan until they reach a light golden color. Watch the process carefully so you don’t over‑toast the sesame seeds.

Dissolve the molasses or honey in a glass of water; if it seems not sweet enough, you can add a tablespoon of granulated sugar.

At this point the dough should have risen well in volume. Place the dough on the table, no need to dust it with flour.

Divide the dough into 5 equal parts; ideally each piece of dough should weigh 120 grams.

Roll each piece of dough into a thin rope about 80 cm long.

Fold the braid in half and twist it into a cord, leaving a loop on one side.
