
Turkish bubliks
Description
The presented recipe is intended for 8 bagels. I baked half of the stated recipe, so I ended up with 4 bagels. If your oven has a convection function, you can use this mode at 180 °C, then the baking time will be 20–25 minutes. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Pour 100 ml of water into a bowl, and add the yeast to it.

Stir until the yeast dissolves.

Add a portion of the flour, about 100 g of the total flour, to the yeast.

Stir the flour and let the pre‑ferment rest a little, just to revive the yeast.

Sift the remaining flour into the mixing bowl, add salt, and stir.

Pour in the starter.

You can knead the dough with a mixer, adding one tablespoon of olive oil during the kneading.

After mixing with a mixer, sprinkle the work surface with flour, then continue kneading by hand until the dough no longer sticks to your hands, about 10–15 minutes.

Cover the dough with plastic wrap and let it rest for 40 minutes.

While the dough is rising, lightly toast the sesame seeds in a pan without oil; this takes literally 1 minute. Watch the process carefully so the sesame seeds don’t burn.

Prepare a syrup in which you will dip the bubliks. To do this, dissolve 3 tbsp of honey in 100 ml of water.

On a flour‑dusted table, lay out the dough and divide it into portions.

Roll each piece of dough into a ball and let it “rest” for 5–10 minutes.
