Description

The pastry is simple and quick to prepare. Pide filling can vary—feta cheese and egg, herbs and cheese. But this rich filling is undoubtedly one of the tastiest. The dough made according to this recipe turns out absolutely delicious. Serve with tea or coffee.

    It's best to start by preparing the dough. Add sugar, salt, and vegetable oil to a warm mixture of milk and water. Beat in two eggs and mix until well combined.

    Add the sifted flour mixed with yeast and knead a soft dough. Add the flour gradually, adjusting according to the desired consistency. The dough should be soft, like an earlobe.

    Roll the dough into a ball, place it in a greased bowl, and let it rise in a warm place until doubled in volume.

    For the filling, cut the vegetables and mushrooms into small cubes.

    Sauté the mushrooms in oil, add the onion and garlic, and cook until the onion becomes translucent.

    Place the pide on a baking sheet lined with parchment paper or a baking mat, brush with a mixture of egg and milk, sprinkle with grated cheese, and let rise until doubled in volume. Bake in a preheated oven at 200°C until golden brown. Place the baked pide into a pot on a towel and cover with another towel.
