
Turkish flatbread gözleme
Description
Homemade pastries for tea. Traditional Turkish flatbreads called gözleme are made with various fillings. If you've visited resorts in Turkey, you're already familiar with this delicious and simple baked treat. Gözleme are traditionally cooked on special griddles called "sac," but if you don't have one, simply fry them on a regular skillet without oil. A perfect filling consists of herbs and cheese: spinach, basil, parsley, and feta (or brined cheese like brinza). Serve with tea or coffee.

Prepare the dough. Sift the flour into a bowl, add salt, then pour in the water and oil.

Knead a soft dough, roll it into a ball, wrap it in plastic wrap, and refrigerate for an hour.

Then divide the dough into 3 parts.

Each ball should be rolled out into a thin layer.

Roll from the center to the edges, forming a circle.

The result is a circle with a diameter of approximately 30 cm.

Prepare the filling: finely chop the herbs. Crumble the cheese (brined or feta) with your hands.

Sprinkle the layers with the filling.

Fold as shown in the photo: first the opposite edges from the bottom and top.

And then the side edges. You get a kind of envelope.

Fry on a preheated pan until cooked on both sides. You can add a little vegetable oil, but ideally it won't be needed. Gözleme is cooked on a dry pan.

Overall, I fried them for about 4-5 minutes on each side.
