
Turkish bazlama on kefir
Description
Delicious baking for the whole family. Turkish flatbreads called “bazlama,” cooked in a skillet, turn out appetizing, airy, and very tasty. You can serve them at the table as bread, or you can cut a slit, tuck filling into the pocket that forms, and serve them that way as well. I’m sure that once you make these flatbreads, you’ll be happy with the result! You can make Turkish bazlama with kefir for a family meal, for a picnic outdoors, or simply as a snack with tea during the day. They can be served with tea or coffee.

Prepare all ingredients.

Combine warm water, sugar and yeast. Mix and leave for 15 minutes.

Then add warm kefir, flour and salt.

Mix and add 2 tbsp vegetable oil.

Oil the prepared dough and leave it in a warm place for 1 hour. Cover the bowl with a towel.

The dough will rise well.

Rub your hands with vegetable oil and knead the dough. Turn it out onto a work surface and divide into 6–10 pieces.

Lightly dust your work surface with flour or brush it with vegetable oil. Roll the dough into a round flatbread about 1 cm thick. I simply shape the flatbreads by hand.

Heat the skillet well. Cook the flatbreads over medium heat in a dry skillet.

After 10–15 seconds start flipping the flatbread. It will still be pale! After another 10–15 seconds flip the flatbread again. You’ll need to flip the flatbread a few more times in the pan until it’s done.

Transfer the flatbread to a plate, then roll out and fry the remaining flatbreads in the same way. If you like, you can brush the finished flatbreads with butter.
