
Tunisian brik
Description
Perfect with tea or coffee. Tunisian brik are very popular hand pies in thin, crisp pastry. The filling can vary; here I suggest an authentic version. If you are not sure about the quality of the pastry, it is better to use a double layer from the outset. Serve with tea or coffee.

Prepare the ingredients.

Boil the potatoes, mash them into a purée, and add finely chopped parsley.

Grate the cheese on a medium grater.

Fold the dough into a square, folding the corners toward the center. For extra stability, you can use two layers of dough. Do this on a plate so it will be easier to transfer to the pan later.

In the centre, spoon mashed potato in a circle to form a ring.

Pour an egg into the center of the mashed potatoes and sprinkle lightly with salt.

Add finely chopped yellow onion onto the purée, sprinkle with grated cheese, and place 7–8 capers on each portion.

Place the canned tuna over the egg, sprinkle with cheese. Brush the pastry edges with egg white. Fold the pastry into a triangle and press the edges tight.

Fry the brik on both sides in a hot skillet over medium heat, spooning vegetable oil over it from the pan.

Serve Tunisian brik hot; you can serve it with any sauce, fresh herbs, black olives, or green olives. This pie can replace a full lunch or dinner because it is very filling. It is delicious!
