
Cherry Rolls
Description
Homemade pastry for tea. I use frozen cherries for the filling, but fresh berries work just as well. This pastry is suitable both for festive occasions and everyday tea time.

Place all ingredients on the table before starting preparation.

Place the frozen cherries in a saucepan and sprinkle with sugar.

Over medium heat, bring the syrup to a boil, then cook for 2-3 minutes, stirring with a spoon.

Then drain the hot cherries through a sieve and leave them to cool.

Prepare the shortcrust dough. Pour melted and already cooled butter into a bowl, add vanilla sugar, sour cream, and baking soda neutralized with vinegar.

Mix everything until a homogeneous mixture is obtained.

Sift the flour.

Knead a soft dough, shape it into a ball, place it in a food-grade plastic bag, and refrigerate for 1–2 hours.

Then roll out the chilled dough with a rolling pin into a sheet about 3 mm thick. Cut the sheet into equal rectangles with a knife (approximately 10x20 cm in size).

Place cherries in a row in the center of each rectangle, as shown in the photo.

Then firmly press the edges of the dough together with your fingers, forming sticks.

Place all prepared sticks onto a baking sheet lined with parchment paper, brush the surface of each with milk using a silicone brush, and sprinkle each with sugar.

Let the finished rolls with cherries cool slightly and serve.

Remove from the oven and serve warm or cooled.
