
Shortcrust pastry tubes

Prepare all the ingredients according to the list. For the filling I’m using boiled condensed milk, but you can use any other filling you like. The main requirement is that the filling must be thick and sweet enough, since no sugar goes into the dough.

I’ll show you how to make the dough in a blender, but you can also knead it by hand on any work surface. Put the flour, salt, baking powder, and vanilla into the blender jar.

Add cold butter cut into cubes.

Mix quickly until the mixture resembles coarse crumbs.

Add the sour cream.

Stir quickly once more.

If the dough is sufficiently sticky, add another 1–2 tbsp of flour.

The dough will be ready when it starts to gather into a ball.

Gather the dough into a ball and place it in a bag. Refrigerate for 20–30 minutes.

Divide the chilled dough into two parts (work with one; put the other back in the refrigerator).

Roll out the dough into a round sheet; the thinner it gets, the better—ideally 1–2 mm thick.

Cut the circle into 8 segments. On each segment, using a piping bag, pipe a little condensed-milk filling.

Cover the filling with the outer corners and roll into a crescent.

Transfer the tubes to a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for 20 minutes.
