
Tropical pancakes
Description
The pastry is simple and quick to prepare. The pancakes made according to this recipe turn out truly tropical, thanks to the coconut oil and orange sauce. If desired, you can make the sauce using pineapple juice instead—it will also taste delicious. I recommend using farm-fresh cream, as it becomes very thick and fluffy when whipped. You can make the sauce slightly thicker by adding a bit more starch dissolved in water. The pastry is ready. Serve at the table.

1. Prepare the pancake batter: lightly beat the eggs with a whisk, add sugar, coconut milk, water, and cooled melted butter. Sift the flour with salt and mix well.

2. Prepare the orange sauce: mix orange juice with orange zest, cornstarch, and sugar. Stir well, bring the mixture to a boil, and simmer for several minutes over medium heat.

3. Fry the pancakes on a vegetable oil-greased skillet on both sides (they won't turn golden due to the coconut milk). Whip the cream with powdered sugar and orange zest until fluffy.
