
Triple Plum Pie
Description
Perfectly pairs with tea and coffee. For this cake, you'll need juicy but not overripe plums. Place them on the dough with the cut side down. It's best to bake the cake on the lower rack of the oven so the top doesn't burn. Once cooled, cut the cake into portions and serve. Serve cooled or slightly warm.

Melt the butter, add 40 grams of sugar, egg yolks, salt, water, and sift in the flour. Knead the dough, roll into a ball, and refrigerate to chill.

To ensure the egg whites whip well, chill them first. Place the egg whites in the mixer bowl and start beating. Gradually add granulated sugar and continue beating until stiff peaks form.

Roll out the dough, place it in a baking pan, forming the edges. Prick the dough with a fork, sprinkle with oats and vanilla sugar. Place pitted plums, halved, on top, and spray them with cognac.

To prevent plums from releasing too much juice during cooking, sprinkle them with starch. Then add a little granulated sugar.
