
Truffles with cherry
Description
The recipe won't take much time. Cherry truffles turn out with a pronounced cherry and cognac flavor. You can use fresh, frozen, or even dried cherries—just make sure they're pitted. The chocolate for the candies should be high quality, as it determines the truffles' taste. Instead of rolling the candies in cocoa powder, you can coat them with dark or white chocolate. Serve chilled.

Prepare all the necessary ingredients for making cherry truffles. Pour brandy over the cherries, seal tightly, and refrigerate for 12 hours.

Break the chocolate into pieces and place in a heavy-bottomed saucepan. Add the butter to the chocolate.

Place the saucepan over a double boiler and melt the chocolate with the butter, stirring constantly.

Heat the cream to a temperature of 65-70 degrees, then pour it into the saucepan with the chocolate. Mix until smooth.

Drain the cherries through a sieve and let the cognac drain off. Add half of the berries to the chocolate mixture and the cognac from the berries to the chocolate. Blend with a blender until smooth.

Transfer the truffle mixture to a clean mold and refrigerate for 12-18 hours to set.

Take a teaspoon of the chocolate mixture, flatten it into a small disc, and place a cherry in the center. Shape it into a smooth, round truffle without cracks.
