
Cod with bacon

1. Finely chop the bacon. Chop the basil. Clean the fish and remove the skin. Preheat the oven to 170 degrees Celsius. Heat a skillet over medium heat and add the bacon along with 2 tablespoons of olive oil. Cook until the bacon becomes crispy, about 5 minutes, turning frequently. Add the breadcrumbs, stir and cook for another 2 minutes. Add the butter and chopped basil, continuing to stir until the butter melts. Push the mixture to one side of the skillet.

2. Tear off a piece of aluminum foil or parchment paper large enough to wrap the cod. Place the fish on the foil or parchment paper, pour 1 tablespoon of wine over it, and wrap tightly. Repeat the same procedure with the second fish. Place the wrapped fish in the oven and bake for 12–15 minutes at 180 degrees Celsius. Two minutes before the fish is done, heat the bacon and breadcrumbs mixture in a skillet. Place the fish on a plate and sprinkle with the bacon and breadcrumb mixture. Serve with a side of beans, peas, or new potatoes.
