
Cod pan-fried with cherries
Description
The recipe won't take much time. Use fish fillet to save time on cleaning the fish. It should be seared in a pan beforehand to seal in all the juices. Instead of cherry tomatoes, you can use regular tomatoes, but choose those with less juice. Serve the dish slightly cooled. Serve hot.

1. Wash the cod and cut it into small pieces. Season each piece with salt and pepper on both sides.

2. Heat a frying pan with a tablespoon of olive oil, place the cod in it and fry on both sides until golden brown.

3. Remove the fish from the pan, return the pan to the heat. Peel and finely chop the garlic, sauté until fragrant.

4. Cut the cherry tomatoes in half and add them to the garlic, pour in the wine, mix and let it sit for 1-2 minutes.

5. Return the fish to the pan, add the basil leaves.

6. Simmer everything for a few minutes, then turn off the heat and add some lemon zest or lemon juice.
