Instructions
- 1
Step 1

Prepare the listed ingredients. It is best to use gel food coloring, as it does not fade during baking.
- 2
Step 2

Break the chicken eggs into the bowl of a mixer or food processor, add sugar and salt. Beat for 3-4 minutes until fluffy.
- 3
Step 3

Mix kefir of any fat content with the food coloring and add vegetable oil. Mix again.
- 4
Step 4

Pour the colored mixture into the beaten eggs, add the cocoa powder. The cocoa powder is added to make the red color of the batter richer and prevent it from fading during baking. Then add the flour and baking powder.
- 5
Step 5

Spray the baking pans with vegetable oil and place the dough in them. It's best to use several pans, placing small portions of dough in each — this way it will bake faster and won't burn.
- 6
Step 6

Preheat the oven to 160 degrees and place the pans on the middle rack. Bake for about 25–30 minutes. If baking all the batter in one pan, bake for about 45–50 minutes and check with a wooden skewer. While the cakes are baking, take the butter out of the refrigerator so it can soften.
- 7
Step 7

Cool the cakes and crumble them in a deep container.
- 8
Step 8

Beat the chilled cream for 3-4 minutes until slightly thickened, then add softened butter, cream cheese, and powdered sugar. Beat for another 2-3 minutes, gradually pouring in the lemon juice.
- 9
Step 9

Sprinkle some red velvet crumbs onto the bottom of glasses or cups. Optionally, you can moisten them with any syrup.
- 10
Step 10

Place the prepared cream into a pastry bag and pipe it onto the crumb mixture.
- 11
Step 11

Then, layer the crumbs again and pipe the cream on top. Decorate the "Red Velvet" trifles with sprinkles or fresh berries, and place them in the refrigerator to chill for at least half an hour.
- 12
Step 12

Serve the dessert chilled. Enjoy your meal!
