
Traditional chocolate cookies with nuts

Tasty baked goods for the whole family. A simple recipe for homemade chocolate cookies that your kids will surely love. The baked goods can be prepared for an everyday dessert or for holidays. This recipe yields 45 chocolate cookies. If you want to vary the flavor of the cookies, you can add the following optional ingredients: - for cocoa chocolate cookies: 1 ¼ cups flour and ¾ cup unsweetened cocoa powder; - for espresso chocolate cookies: 1 ½ tablespoons instant espresso coffee powder (after adding vanilla extract); - for peanut cookies: 12 tablespoons unsalted butter, ½ cup peanut butter (beat together before adding sugar) and salted peanuts; - for coconut cookies: 1 ½ cups sweetened shredded coconut (add to the dough with chocolate and nuts) They can be served with tea or coffee.

1. Preheat the oven with the rack in the center to 190 °C. Line two baking sheets with parchment paper or silicone mats. Mix the flour, salt, and baking soda. Using a mixer in a large bowl, beat the butter on medium speed for about 1 minute. Add the sugar and beat for another 2 minutes. Add the vanilla extract. Add the eggs one at a time, beating for 1 minute after each addition.

2. Reduce the mixer speed to low and add the dry ingredients in 3 additions, beating after each addition. Add the chocolate cut into pieces and the nuts, beat with the mixer on low speed or stir using a rubber spatula.

3. Place the cookies on a baking sheet, using a rounded spoon, spaced 5 cm apart.

4. Bake the cookies on each sheet pan for 10–12 minutes, flipping the pan halfway through baking, until the cookies are browned at the edges and golden in the center. The cookies may be slightly soft in the middle. Remove the pan from the oven and let it stand for 1 minute, then use a wide metal spatula to transfer the cookies to a rack and let them cool to room temperature. Repeat with the remaining cookies, cooling the pans between batches.

5. Cookies can be stored in a closed container for up to 4 days; they can also be tightly wrapped and frozen for up to 2 months.
