
Traditional Skordalia
Description
A tasty appetizer for any gathering. If the prepared dish is served with vegetables, it can also be eaten during Lent. The appetizer is ready. Serve immediately.

1. Wash the potatoes and peel them. Cut into large pieces and boil until done. Drain the water and dry the potatoes slightly.

2. Finely chop the garlic cloves with a knife or press them through a garlic press. Finely chop the parsley. Drizzle a little olive oil into the potatoes. Add the herbs, garlic, lemon juice, salt, and pepper. You can puree the mashed potatoes in a blender. But if you mash them by hand, the dish will taste better. Add the olive oil gradually.

3. The result will be a dish with the consistency of a thick sauce. It should be thinner than mashed potatoes. Greeks serve this dish with roasted vegetables. Arabs make it with meat. In the photo with the skordalia, roasted zucchini and roasted pieces of chicken fillet are shown. The result is a fragrant and delicious dish.
