
Toasts with Herring
Description
Perfect for the table and for drinks. You can even make juicy toasts outdoors by slicing and arranging the ingredients in various containers. All you'll need to do is toast the bread slices over the fire. Be sure to assess the fish before buying and check the expiration date on the preserves, especially in summer. Serve with herbs and sauce.

Prepare the listed ingredients. If you purchased lightly salted herring, clean out its innards, fillet it, and slice it.

Heat the butter in a skillet. Slice the bread into serving-sized pieces and fry for about a minute on each side. Let the toast cool for 5–7 minutes.

Rinse the cucumbers in water, removing the spines and dust, trim the ends from the vegetables. Slice them and arrange on the toasts.

Place the herring slices on the cucumbers. If you bought the herring in brine, you can drizzle it with the herring oil on top. Neither mayonnaise nor sour cream is needed.

Garnish with fresh parsley or dill and serve the toasts.
