Description

Homemade pastry for tea. It is worth noting that the pie is made with grapes that contain seeds. If you do not like this, you can choose a seedless variety or remove the seeds. In the second option, there is a risk of losing a small amount of juice. It is needed to soak the pie. Serve cooled or slightly warm.

    Prepare the necessary ingredients.

    Begin preparing the dough with the starter. In a bowl, mix the yeast and 50 ml of water.

    Add 80–90 grams of flour. Knead a soft ball of dough that does not stick to your hands.

    Pour warm (not hot) water over the small dough lump. Leave it until it rises to the surface.

    While the starter is activating, prepare the spiced oil. Add anise to the vegetable oil and heat until it comes to a boil. Remove from the heat immediately.

    Strain and set aside. We won’t need the used anise anymore.

    As soon as the small dough ball floats to the surface, the starter is ready for further use.

    In a bowl, combine the remaining water, flour, 100 grams of sugar, and the spiced oil.

    Add the starter. Begin mixing with a spoon.

    Once the dough becomes uniform, knead it by hand. You may need to add 2-3 tablespoons of flour.

    Place the finished dough in a bowl greased with vegetable oil. Cover the bowl with plastic wrap and refrigerate for 24 hours.

    After 24 hours, remove the bowl from the refrigerator. The dough will have noticeably increased in size. Leave it at room temperature for 2 hours. It may take longer; room temperature is what matters here.

    As soon as the dough has warmed up and noticeably risen, punch it down. Divide it into two parts. Take a rectangular, roomy baking dish. Line it with parchment paper. Stretch one part of the dough over it. It is not a problem if the dough tears in places.

    Place half of the grapes on a sheet of dough. Sprinkle 50 grams of sugar on top. Next, lay the second dough layer and repeat the grape and sugar layer. Put the prepared pie in an oven preheated to 180 degrees for 25–35 minutes. Take into account the specifics of your oven.

    Remove the finished pie from the oven. Leave it in the pan for about 3 hours so it absorbs the released grape juice. After that, you can serve it. Tuscan pie is traditionally broken by hand.
