
Tortellini with vegetables

This recipe for tortellini with vegetables is very simple and, most importantly, it won't take much time, so you can prepare this dish almost every day. You just pick your favorite tortellini (for example, mine are with ham) and cook them with whatever vegetables you have at home—absolutely any will work, there are no strict limitations. In this recipe, I suggest the simplest combination: zucchini, onion, and carrot. By the way, tortellini with these vegetables can even be made in winter. First, prepare all the necessary ingredients. Cut the carrots and zucchini into strips, slice the onion into half-rings, and finely chop the garlic and fresh herbs.

Now we'll boil the tortellini in salted water, while we prepare the vegetables. Pour a little olive oil into a frying pan and sauté the onion and garlic until golden brown.

Then add the zucchini and carrots to the skillet and sauté until tender, about 6-8 minutes.

When the tortellini are almost cooked (al dente), drain them in a colander. Once the water has drained off, transfer the tortellini to the pan with the vegetables, add salt, broth, and simmer for 2-3 minutes. Then sprinkle everything with chopped herbs, season with pepper, and mix well. Divide onto plates and serve.
