Tortellini with mushroom sauce

Description

In a large pot, bring salted water to a boil. Add dumplings and cook according to package instructions until done. Drain. Meanwhile, in a large skillet, heat oil over medium heat. Add mushrooms and garlic, cook, stirring frequently, until mushrooms are tender, about 7 minutes. Add 1 cup of water, season with salt and pepper. Simmer until liquid is reduced by half, about 5 minutes. Remove from heat, add dumplings, Parmesan, butter, and parsley. Toss well and serve immediately.
