Description

Homemade baked goods for tea. Since the symbol of the coming year is the green snake, make the sponge cake green using food coloring. When sliced, this dessert will look very colorful. The baking is ready. Serve at the table.

    Prepare the listed ingredients. Use pastry cream or cream with at least 33% fat. Use green food coloring.

    To make the sponge cake, beat the chicken eggs in the bowl of a food processor or mixer, add the sugar and salt. Beat for 3–4 minutes until light and fluffy. Do not beat any longer, or the egg mixture may separate!

    Add the food coloring and beat again.

    Add top-grade wheat flour and fold it into the beaten eggs without whisking.

    Preheat the oven to 180°C. Grease the pan with vegetable oil, including the sides. Pour the sponge batter into the pan, level the surface, and bake on the middle rack.

    Bake the sponge cake for 30–35 minutes until a toothpick inserted into the center comes out dry. Then remove the sponge cake in its pan from the oven and turn it on its side to cool so it does not collapse while cooling.

    When the cake has completely cooled, trim off the top crust — you won't need it. Then cut the sponge into three layers.

    Whip the cream with sugar using a mixer or in the bowl of a food processor until thickened, but do not overwhip!

    Add the cream cheese and beat again for 1–2 minutes. If desired, you can add flavoring at this point.

    Place the bottom cake layer on a plate. Transfer the cream to a pastry bag or piping syringe and pipe it onto the layer.

    Cover with the second cake layer and pipe the cream again, and so on. Cover the top layer with cream as well, and the sides of the cake.

    Using a wooden skewer, draw a snake pattern on the surface of the cake and outline it with black sesame seeds. Serve the symbolic cake at the table on New Year's Eve.
