Description

Sacher – a Viennese chocolate cake named after the confectioner Franz Sacher. It is one of the most popular cakes in the world. This cake goes well with strong hot coffee, coffee liqueur, and dessert wine. Preparation: Beat butter with a mixer until creamy. Add sugar and beat again. Add egg yolks one at a time, beating well after each addition. Beat egg whites with a small amount of sugar until stiff peaks form, then add to the yolk mixture. Gradually add flour and mix. Chop chocolate into pieces and place in a bowl. Add 2–3 tablespoons of hot water. Set the bowl over a saucepan of boiling water and melt the chocolate. Pour the melted chocolate into the batter and mix thoroughly. Preheat the oven to 180°C. Grease the cake pan with butter and lightly dust with flour. Pour the batter into the pan. Bake for about 40 minutes. Remove the cake from the oven and let it stand in the pan for 10 minutes. Then take it out of the pan and let it cool completely. Cut the cake in half horizontally. Spread each half with slightly warmed apricot jam. Put the layers together and pour melted hot chocolate over the top. Chill the cake before serving.
