Description
Here is an interesting variation on the famous "Red Velvet." Light sponge layers, fresh and juicy berries, and delicate cream—an ideal combination that will delight both children and adults. Most importantly, with step-by-step instructions, making the "Berry Velvet" cake at home is quite easy. Serve with tea or coffee.

1. First, start by preparing the dough. Put softened margarine or butter and sugar into a deep bowl, and rub them together.

2. Add the eggs one at a time, constantly beating the mixture to keep it uniform.

3. In a separate container, combine the diluted food coloring (gel is convenient to use) and cocoa. Mix until a paste forms.

4. Add the food coloring to the oil with sugar and eggs. Beat everything until smooth. Gradually add the flour, sifted with salt and baking soda, in small portions.

5. Slowly pour in the kefir (you can make the "Berry Velvet" cake at home using milk, but I personally prefer baking with kefir). Mix until the batter becomes smooth and free of lumps. Add the vinegar.

7. Prepare two small or one tall mold. Line the bottom with parchment paper and pour in the batter. Bake in a preheated oven at 180 degrees until fully cooked. Thin layers will be ready in about 20 minutes, while a tall cake will take about an hour in the oven.

8. Meanwhile, you can prepare the berries: wash them and let them dry thoroughly.

9. Also, prepare the cream. Place the butter and cream cheese into a deep bowl.

13. Let the baked cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once fully cooled, you can begin assembling the cake. Place the cake layer on a serving plate and spread it with cream. Arrange the berries on top.

14. Cover with the second cake layer on top, but do not press down! Carefully spread frosting over the top of the cake first, then along the sides. Place in the refrigerator for at least 3 hours before serving. The frosting is very delicate and may melt at high temperatures.
