Cake
Description
In my family, there was a big event: my son turned 5 years old. Naturally, he invited his friends from kindergarten, and some of the moms came too. So I decided to attempt a very serious and complex recipe. You can also try this interesting, though not easy, version. Serve it cooled or slightly warm.
Instructions
- 1
Step 1

Start by preparing the honey dough. Bring 6 tablespoons of honey to a boil. Add water, baking soda, sugar, and salt to it. Cook the mixture until it turns orange-brown. Then remove from heat and add the butter. Mix the ingredients and cool the mixture to 40 degrees.
- 2
Step 2

Then add the eggs and flour. Knead the dough. Let it rest for an hour and a half at room temperature.
- 3
Step 3

Divide the honey dough into 15 equal parts. Roll out each part between two A4 sheets (preferably parchment paper).
- 4
Step 4

Bake the cakes at 200 degrees for 8 minutes. Let the finished products cool.
- 5
Step 5

Prepare the cream. Beat 450 grams of butter. Gradually add 3 cans of condensed milk to it. Mix until you get a thick cream.
- 6
Step 6

Generously spread the ready-made cake layers with cream. Leave them in the refrigerator for 8 hours, stacked on top of each other.
- 7
Step 7

For the shortcrust dough, combine sugar with margarine. Add flour, baking powder, and egg yolks to the mixture. Knead the dough.
- 8
Step 8

Divide the dough into 14 pieces. Roll each one out to a diameter of 16 cm, trimming the edges into a circle.
- 9
Step 9

Bake the cake layers in the oven at 200 degrees for 10 minutes. Let them cool completely.
- 10
Step 10

Prepare the cream. Dissolve the gelatin in water. Melt 250 grams of butter and mix it with a can of regular condensed milk. Add vanilla and the remaining honey to the mixture. Heat the mixture until warm.
- 11
Step 11

Next, add gelatin to the cream. Mix it well and place in the refrigerator. After 3-4 hours, beat the cream with a blender.
- 12
Step 12

Now beat the cream and add it to the gelatin mixture. Mix well. The cream is ready.
- 13
Step 13

Spread all shortbread layers with cream. Leave them in the refrigerator for 8 hours.
- 14
Step 14

It's time to shape Winnie the Pooh. Trim the honey cake layers into the shape of an eight to form the head and body.
- 15
Step 15

Grind the cake trimmings in a blender. Use them to shape the face outline, ears, and paws.
- 16
Step 16

Make the icing. Bring milk and butter to a boil. Add caramels and powdered sugar to them. Boil the icing again until the candies are completely dissolved. Don't forget to stir.
- 17
Step 17

Let the glaze cool slightly. Cover the bear with it. Leave it in the refrigerator for a couple of hours.
- 18
Step 18

Meanwhile, prepare the fondant. Boil water with butter and a pinch of salt. Then add cocoa and flour to the mixture. Mix well. Remove from heat. Add powdered sugar. Knead the mixture until you achieve a uniform consistency.
- 19
Step 19

Cover the ears, nose, mouth, and paws with fondant.
- 20
Step 20

Beat the butter with condensed milk. Use this cream to cover the cake using a pastry bag. Place it in the refrigerator.
- 21
Step 21

Make a "pot" from shortcrust pastry. Grind the pastry trimmings in a blender and place them inside.
- 22
Step 22

For the pot topping, make a ganache. Heat the cream. Pour it over the chopped chocolate. Mix until smooth. Let it cool. Pour the ganache over the pot. Refrigerate the cake.
- 23
Step 23

Also make marzipan. Peel and grind the almonds. Mix them with powdered sugar. Add egg white. Mix well.
- 24
Step 24

Roll out the marzipan into two parts. Cover the outer side of the pot with them.
- 25
Step 25

You can use marzipan and fondant to make eyes and a bee. Arrange the cakes into a composition. Enjoy your tasting!
