Description
The baking is simple and quick. You can make the "Vesuvius" cake at home not only for festive occasions, but also for a Sunday tea. If desired, you can replace the prunes with dried apricots, for example. Serve warm or chilled. Perfect with tea.

1. The recipe for the "Vesuvius" cake is quite simple. First, soak well-washed prunes in brandy and leave them for 2–3 hours. To prepare the dough, mix egg with sugar and whisk slightly. Add a pinch of salt and 2 tablespoons of sour cream. Sift flour with a leavening agent. Combine all ingredients with softened butter and knead into a fairly firm dough. Place the dough in the refrigerator for about 1 hour.

2. Stuff the softened prunes with walnuts (you can use other nuts if desired).

3. Divide the dough into 3 parts. Roll one part out thinly and place it in the preheated oven for 15-20 minutes.

4. Divide the remaining dough into small pieces—about 26–28 pieces. Roll each piece out slightly and place a stuffed prune in the center.

5. Put these "little balls" in the oven and bake for about 20 minutes. Then cool thoroughly.

6. Finish the homemade "Vesuvius" cake with sour cream frosting. To prepare it, beat sour cream with sugar. If desired, add a little lemon juice or the brandy in which the prunes were marinated. Place the cake layer on a serving dish and spread with cream. Arrange the balls, pouring them with cream.

7. You can place prunes or nuts between the balls. Arrange them in a mound. Place the chocolate in a double boiler or microwave. Pour the melted chocolate over the cake and refrigerate for at least 1-2 hours.
