Description

The pastry is simple and quick to prepare. When making the sponge cake layers for the "Vampire" cake, you don't have to add wine, raspberry or cherry juice. This is only needed to give the dough a red tint. By the way, it's not necessary to use the sponge recipe provided here—you can easily bake your favorite sponge cake instead. Serve warm or chilled. Perfect with tea.

    1. Prepare the batter for baking three sponge cake layers. Preheat the oven to 180 degrees. Prepare a baking pan (15 cm in diameter for three layers, or 18 cm for two layers), line it with parchment paper. In one bowl, mix flour, sugar, cocoa, vanilla, salt, and baking powder. In another bowl, combine eggs, oil, kefir, and juice or wine. Then mix both mixtures together and beat with a mixer. Pour the batter into the prepared pans and bake for 30 minutes, then let cool.

    2. While the cake layers are baking, make the bats and the "bloody" ganache. Start with the bats. Melt the chocolate using a double boiler (you can add a little butter or cream). Meanwhile, draw bat outlines on parchment paper (you can find them online).

    3. Carefully spread the hot chocolate onto the parchment paper, trying not to go beyond the outlines. Insert a long wooden stick into the bottom center of the mouse shape.

    4. Bat eyes can be made from white chocolate or round candies. Attach them to the unset chocolate.

    5. White cake cream is made from butter, milk, and powdered sugar. First, beat the butter with a mixer, gradually adding powdered sugar, then add the milk. Spread the cream between the ready sponge cake layers, stacking them on top of each other, then cover the entire cake with cream.

    6. To make the ganache, heat the cream over medium heat (do not bring to a boil!). Remove from heat and add the caramel (preferably crushed). Stir until the caramel dissolves. Then pour the resulting mixture over the cake chilled in the refrigerator (!).
