Description

Let's make a ginger cake with berries, cinnamon, and buttercream.

Combine flour, baking powder, ground ginger, cinnamon, and ground nutmeg in one bowl and mix well.

In another (weigh the empty cup and remember the weight), beat the eggs (2 pcs.) with sugar (100 g) for about 3-4 minutes, until the mixture increases significantly in volume.

Melt the butter (125 g) in a saucepan, let it cool slightly, then add the cream (100 g) and milk (150 g).

Alternately add the dry ingredients and the liquid from the saucepan to the egg mixture. Beat well with a mixer.

At the end, add 100 grams of honey or flavored maple syrup.

I baked the cake in 16-centimeter pans. It made three layers. To do this, grease the pan with butter and dust with flour. You can place a circle of parchment paper on the bottom. Pour one-third of the batter into the pan. This is exactly why we weighed the empty bowl. Now you can determine the weight of the batter and divide it by three.

Bake at 175 degrees for 20–30 minutes. The top should turn golden brown, and a toothpick inserted should come out dry. Remove from the oven and let cool on a wire rack, first in the pan (for about 5 minutes), then turn the cake out and let it cool on the rack by itself.

Now it's time to prepare the cake cream. We'll be making a cheese cream. And here's the most important and only rule — very cold cream cheese, very soft butter.

So it's better to keep the cheese in the refrigerator overnight so that it stays cold and firm enough. On the contrary, leave the butter at room temperature on the kitchen counter for a couple of hours (or overnight) so that it becomes soft and pliable. Only under these conditions will you get an excellent cream with a delicate texture and flavor. The process is very simple—just combine the ingredients in a bowl and beat with a mixer until smooth. This will take about 5-7 minutes. Here's a tip that many people ask about: if the powdered sugar grits or you want a whiter color, do this—first beat the butter and powdered sugar at maximum speed for 5-10 minutes, then add the cheese.

Now we need to decorate the cake with the cream. Transfer the cream into a piping bag. To remove the domed tops from the cake layers, slice them off with a knife (I usually use a cheese knife).

The convenience of holding cream in a piping bag is that it doesn't dry out, and it's very easy to make even layers of cream. Just pipe the cream in a spiral.

Assemble the tower, adding cream on top as well, then place the berries on it—in this case, cherries and candied blueberries. If you want the cake to look the same on the sides, generously cover the outside with cream (pipe it from a piping bag) and smooth it with a spatula or scraper.
