Description
Generally, the classic "Shrek's Smile" cake recipe involves alternating layers of pistachio mousse with raspberry jelly and white mousse to capture the colors of the smile. But honestly, I didn't like the combination. However, I was absolutely in love with the pistachio part of the cake—so I decided to make this version. Try it too. Serve cooled or slightly warm.

1. Let's make a nut sponge cake. Mix 60 g of ground almonds with 60 g of sugar and 60 g of flour. Add one whole egg and two egg yolks, without the whites. Mix thoroughly.

2. Beat 4 egg whites with a small amount of sugar until stiff peaks form. Gradually add to the egg mixture.

3. Bake in a springform pan at 200 degrees with convection. Let the biscuit cool and soak it with "Amaretto" liqueur or cognac, if desired.

4. For the pistachio mousse, mix the paste, 2 tablespoons of flour, 6 egg yolks, and 130 grams of sugar. Meanwhile, prepare the gelatin according to the instructions.

5. Heat the milk without boiling, then pour it into the pistachio mixture. Place on the stove and bring to a thick consistency. Let it cool slightly, then add the prepared gelatin.
