Jam Cake
Description
Perfectly pairs with tea and coffee. The classic "Rotten Log" cake recipe with jam works well with any berries or fruits. This is a great example of a simple yet sophisticated dessert. Such a treat can be served both for daily tea time and for a festive table, if properly presented.
Instructions
- 1
Step 1

1. You can't get any simpler than this with the dough. Mix the jam, kefir, and baking soda in a bowl (no need to pre-activate the soda, as the kefir will handle that).
- 2
Step 2

2. Beat the eggs with a cup of sugar and mix with kefir. Combine both mixtures thoroughly until smooth.
- 3
Step 3

3. Gradually add the flour, kneading the dough until smooth and free of lumps. The amount of flour in the "Rotten Stump" jam cake recipe may vary, as it largely depends on the consistency of the jam.
- 4
Step 4

4. The dough will not be dense anyway. Divide the resulting mixture in half and pour into a greased pan or one lined with parchment paper. Place in a preheated oven and bake for about 15–25 minutes, until the cake layer is done (check with a dry matchstick or toothpick).
- 5
Step 5

5. When the cake layer is ready, it needs to be thoroughly cooled and then cut in half lengthwise. If the "Rotten Stump" cake with jam is being prepared at home using a larger quantity of ingredients, it can be cut into 3 parts.
- 6
Step 6

6. To prepare the cream, mix the sour cream with the remaining sugar and beat thoroughly. Alternatively, in this simple "Rotten Stump" jam cake recipe, you can use any other cream of your choice.
- 7
Step 7

7. Soak the completely cooled cake layers with the cream. Use as much cream as desired—the more cream, the moister the cake will be.
- 8
Step 8

8. Once all the cake layers are assembled, you can decorate the cake as desired. Then let it sit for a couple of hours so it can thoroughly soak.
