
No-bake cake
Description

Using vanilla rusks makes the cake less sweet; if you prefer, you can replace the vanilla rusks with cookies—for example, oat cookies. You can vary the dried fruit mix to suit your taste.

Prepare the ingredients and thoroughly rinse the dried fruit (raisins, prunes, dried apricots).

Grind vanilla breadcrumbs, dried fruit, and nuts using a meat grinder or a blender.

Mix the crumbs until homogeneous.

Melt 70 grams of chocolate and 70 grams of butter in the microwave in short 30-second bursts.

Mix the chocolate mixture until smooth and uniform.

Pour the chocolate mixture over the crumble.

Mix well until the crumbs bind with the chocolate.

Soak the gelatin in three tablespoons of water and leave to swell for 5–10 minutes.

While the gelatin is blooming, prepare the sour cream–cottage cheese cream: whip the sour cream with sugar.

Add cottage cheese to the sour cream, and whisk everything together.

For a finer texture, you can press the cottage cheese mixture through a sieve.

Heat the gelatin; you can do this in the microwave for 10–15 seconds or by any other method. Pour the melted gelatin into the cottage cheese–sour cream mixture and mix.

Assemble the cake in an 18 cm diameter mould, line the sides with acetate film, divide the crumb mixture into four parts and the sour cream–cottage cheese mixture into three parts. When assembling, stack all the layers in order, alternating them; finish with the crumb layer on top. Chill the cake for 2–3 hours in a cool place so it firms up.

For the decoration, melt 30 grams of chocolate and 30 grams of butter again. If you like, you can use more chocolate.

Drizzle chocolate glaze along the edge of the cake so chocolate drips form; if you like, you can cover the whole top of the cake with chocolate and decorate with walnut halves.
