
No-bake soufflé cake
Description
The recipe won't take much time. Simple to prepare yet incredibly delicious, this is a no-bake soufflé cake. This dessert is perfect for afternoon tea and especially popular during hot weather when you don't feel like standing by the stove. It's so delicate that it's best to make the crumbs very fine and free of chunks. You can use a blender, a kitchen mallet, or whatever you have on hand. Alternatively, you can use a ready-made thin biscuit cake. Decorate with cocoa, chocolate, berries, or fresh fruits. Serve cooled or slightly warm.

Prepare all the necessary ingredients for making a no-bake soufflé cake. Take the butter out in advance so it becomes soft.

Break the cookies into pieces and turn them into crumbs, add the soft butter and mix until smooth.

Transfer the cookie dough into a pan lined with plastic wrap. Spread evenly over the bottom and form edges, pressing firmly. Place the base in the refrigerator.

Soak the gelatin in cold boiled water and let it swell for 30–40 minutes. Dissolve it in a water bath until smooth.

Place the powdered sugar, yogurt, and cream cheese into a bowl. Beat everything until smooth.

While continuing to whisk, pour in the dissolved gelatin and whisk until a homogeneous mixture is obtained.

Remove the crust from the refrigerator and pour the cheese mixture over it, smoothing it evenly. Place the soufflé cake back into the refrigerator and leave it to set completely. This will take approximately 4–5 hours. Carefully remove the cake, decorate it as desired, and serve.
