Description

Delicious baked treats for the whole family. A no-bake cake is not only easy but delicious! Online you’ll find many similar recipes built around condensed milk and butter. In my recipe we make the frosting from sour cream, so the dessert turns out not only less expensive but also lighter and more delicate on the palate. A truly satisfying little cake without hassle—perfect when you crave something sweet but don’t have the time or energy for anything more elaborate. You can dust the top with cocoa, sprinkle nuts on top, or drizzle honey or jam over it. A lovely tea-time sweet with hardly any effort. Serve with tea or coffee.

    Prepare all the ingredients listed. It is important to use good sour cream—fresh, high quality, and at least 20% fat. I had 15% sour cream, which I strained through cheesecloth for several hours beforehand so all the whey could drain off. You can use any shortbread cookies you like. I used chocolate with hazelnuts, but you can use any milk or dark chocolate without inclusions.

    In a deep bowl, combine sour cream and powdered sugar; if you like, you can add vanilla, especially if you are making the cream without chocolate.

    Stir with a spatula or a spoon. Do not use a mixer, or the sour cream will heat up. The warmth will make it runnier.

    Break the chocolate into pieces and melt it in a double boiler or in short bursts in the microwave.

    Add a small amount of sour cream.

    Combine the chocolate mixture and the sour cream.

    Mix with a spatula or spoon. Taste and, if needed, adjust the sweetness. The cream is ready.

    Prepare a plate or stand for serving the cake. Spread a small amount of cream on the bottom so the dessert underneath won’t turn out dry, and the cookies will stay put and won’t slide.

    Place a layer of cookies on top.

    Spread cream on the cookies.

    Place another layer of cookies on the cream.

    And arrange the remaining cookies on the cream. You may get more layers—it all depends on the size of your plate.

    You can decorate the dessert with nuts or any pastry decoration; I used cookie crumbs. Break the cookies by hand so you get small pieces.
