Description
It's safe to say that this cake recipe fully complies with the GOST standard, as the "Spartak" cake turns out incredibly delicious, tender, aromatic, and very soft. Although making the cake takes quite some time, I highly recommend treating your loved ones to this exquisite and festive dessert more often. The sour cream custard filling combined with soft honey layers and chocolate glaze makes this cake unforgettable, so feel free to prepare it for your guests. The baking is complete. 1. Mix the sifted flour with cocoa powder and baking powder. Beat the eggs until smooth. In a saucepan, combine butter, sugar, and honey, and place over a double boiler. To the melted mixture, add the eggs and stir well.

2. Add the soda and cook, stirring, for another 10 minutes. Remove from the steam bath, mix in the flour mixture and knead the dough. Let the dough cool for 15 minutes. Sprinkle a plate with flour and divide the dough into 8 parts.

3. Cover the dough with plastic wrap and refrigerate for 30 minutes. For the cream, mix sour cream with sugar, vanilla sugar, egg, and starch, then place over a double boiler. Cook, stirring constantly, until the cream thickens and the whisk leaves a trail.

4. Transfer the cream to a bowl and let it cool completely. On a floured surface, roll out a piece of dough into a 2-3 mm thick layer. Transfer it to a baking sheet and prick with a fork. Bake in a preheated oven at 180 degrees for 8-10 minutes.

5. Trim the hot cake using the bottom of a springform pan as a template. Beat the soft butter with a mixer for 5 minutes. Add the custard cream one tablespoon at a time, beating well after each addition. Assemble the cake.

6. For the icing, mix sugar and cocoa powder. Add milk and place over low heat. Bring the mixture to a boil and cook for 2 minutes, stirring constantly.

7. Remove from heat, add the butter and mix well. Let the mixture cool slightly, then pour it over the top layer when the icing thickens. Crush the cake trimmings into crumbs and sprinkle them over the sides of the cake.
