
Strawberry Whipped Cream Cake

Soak the gelatin in cold water.

Mash the strawberries with a fork, add sugar. Mix until the sugar dissolves. Drain some of the juice from the strawberry mixture into a separate bowl.

Beat the eggs with a mixer, then add the condensed milk (continue mixing).

Line a removable mold with parchment paper and grease it with oil. Sift flour with baking powder into the batter, add the poppy seeds (mix again with a mixer). Pour the batter into the mold and bake for 50 minutes in the oven.

Dissolve the gelatin in a double boiler. Pour it into the fruit purée and mix thoroughly. Add rum to the strawberry juice, then refrigerate the berries for 40 minutes (to thicken), stirring occasionally.

Whip the chilled cream with powdered sugar at high speed. Soak two cake layers with rum syrup. Spread 1/2 of the strawberry purée on top, then add 1/3 of the whipped cream.
