
Halva Cake
Description
This recipe yields a very tender and stable sponge cake that rises beautifully and doesn't collapse. The cream is delicate, with a pleasant halva flavor—pure delight.

Preheat the oven to 200 degrees.

Beat the eggs with sugar until stiff peaks form.

Add the sifted flour, starch, and baking powder, and gently mix with a spatula.

Place a sheet of parchment paper on a baking tray and lightly grease it with a thin layer of oil. Place the dough on it and smooth the surface with a knife or spatula.

Place the baking sheet on the middle rack of the oven and bake until lightly golden, about 12-15 minutes.

Place the finished dough on parchment paper onto a rack to cool to room temperature. Then carefully peel off the paper.

Place the dough sheet on the table and trim the uneven edges. Cut the dough widthwise into 3 equal rectangles. Turn the trimmings into coarse crumbs using a blender or by hand.

For the cream, beat soft butter with crushed halva, condensed milk, and vanilla.

Spread the cooled cake layers with cream, then cover the top and sides of the cake. Sprinkle the top and sides of the cake with the prepared crumbs.
