Description
Delicious baked treat for the whole family. This is a wonderful version of a classic cake. And although it will take quite a bit of time, you'll spend very little effort, believe me. Just imagine how delighted your family and guests will be when they taste this cake. It's delicious, tender, and aromatic. So don't be lazy—make the "Black Forest Cherry" cake using this recipe. You'll do great! The baking is ready. Serve it at the table.

Place the sugar in a deep bowl, pour in a glass of boiling water, and stir. Add cherry liqueur or brandy. Add cinnamon as well.

Add the pitted cherries to the prepared syrup. Let them sit for at least 2-3 hours, or preferably overnight.

Separate the egg whites from the yolks. Beat the yolks with 60 g of sugar until a thick, light mixture forms.

Beat the egg whites until stiff foam forms, then add 60 g of sugar and continue beating until the mixture becomes thick and glossy.

Gently mix the beaten egg whites and yolks. Add flour mixed with starch, cocoa, and a pinch of cinnamon.

Add the melted, cooled butter, and mix again from the bottom up.

Take a 20 cm baking pan, grease it with butter and dust with flour. Place the dough inside and bake the sponge cake at 200 degrees for about 25-30 minutes. Do not remove the sponge cake from the pan until it has cooled completely.

Prepare the cream. Heat half of the cream almost to boiling, then add 80 g of chopped chocolate.

Mix until smooth and glossy. Place the cream in the refrigerator for 2–3 hours, then beat with a mixer at high speed until fluffy.

We cut the cooled biscuit into 3 parts.

Our cherries have already been marinated, so we drain them in a colander to let the syrup drip off. Soak the bottom cake layer with syrup — this will take about 5-6 tablespoons of syrup.

Place the cream into a pastry bag and pipe it onto the cake layer in a spiral circular pattern. Place cherries between the cream.

On top of the cherries, add a little more cream and smooth it out.

Cover with the second cake layer, soak with syrup, spread cream and cherries, then top with the third soaked layer.

Whip the chilled cream with powdered sugar.

Spread the cake with whipped cream on the sides and top. Smooth it neatly.

Using a sharp knife (or a grater), make chocolate shavings and leave them in the freezer. Chop the remaining chocolate and use the pieces to decorate the sides of the cake. First, decorate the top with whipped cream and cherries, then add the chocolate shavings from the freezer. Let the cake chill in the refrigerator for at least 2 hours.
