1. The sponge cake for this cake should be prepared 8-12 hours in advance. I recommend making a Genoise sponge. Cut the baked sponge into 3 parts to get 3 cake layers.

2. Rinse the cherries and place them in a bowl, then sprinkle with sugar (50 g). Let stand for half an hour, then drain the released juice into a separate container. You will need 170 ml of juice, so if there is not enough juice, add water to make up the difference.

3. Next, prepare the cherry syrup: pour the obtained juice into a saucepan, add 120 g of sugar. Bring to a boil and cook for 3 minutes. Then remove the syrup from the heat and add the cherries. Let the syrup cool, then remove the cherries, place them on a sieve or colander, and collect the syrup that drips off.

4. Now prepare the chocolate cream. Chop the chocolate.

5. Heat the cream (70 ml) with powdered sugar (1 tbsp) in a saucepan. Remove from the stove and add the chopped chocolate. Mix well and refrigerate for at least half an hour. Lightly, but only very lightly, whip the prepared cream using a whisk.

6. Place the cream (250 ml) in the refrigerator for about 15 minutes, then whip. Add 2 tablespoons of powdered sugar and continue whipping until the cream thickens sufficiently.

7. Now we can assemble the cake. Place the first cake layer on a serving plate, pour syrup over it, and spread with cream. Next, soak the second layer with syrup, place it on top of the first one, and pour cherry syrup over it. Spread half of the whipped cream evenly over the surface. Add the cherries. Soak the third layer with syrup and spread it with whipped cream. Place the third layer on top of the second, with the creamed side facing down.

8. Whip the cream (200 ml) with powdered sugar (1.5 tablespoons) again. Spread the cream mixture over the top and sides of the cake. Decorate the sides and center of the cake with chopped chocolate. Whip the cream once more with the same amount of powdered sugar, this time adding starch or cream stabilizer. Pipe or spread the whipped cream onto the edges of the cake and decorate with cherries. The cake is ready!
