Description
Homemade pastry for tea. The cake “Gugutse’s Hat” is named so because in cross‑section it resembles the shepherd’s hat worn by a little boy named Gugutse, the hero of the fairy tales by Moldovan writer Spiridon Vangeli. The cake turns out very large and tasty. For the filling, compote cherries are used, and the tube‑shaped layers are spread with cream whipped with sugar. More details, serve cooled or slightly warm.

Prepare all the necessary ingredients. The butter should be at room temperature.

In a deep bowl, combine softened butter, sour cream, sugar, and cognac.

Add the soda neutralized with vinegar and a little flour, mix. Add a pinch of salt.

Add the remaining flour in small portions, kneading each time. You may need a little more or a little less flour than indicated in the recipe.

In the end, you should have a pliable dough. Divide the dough into two equal parts, wrap them in plastic film, and place them in the refrigerator for 1 hour.

Drain the cherries from the compote in a colander, let all the liquid drain, then dry them. Roll out one part of the dough into a rectangle 50×25 cm and about 4 mm thick. Trim the edges of the dough and divide the resulting sheet vertically into 7 strips 6 cm wide. Place cherries in the middle of each strip. Seal the edges carefully so that tubes are formed. Attach the dough trimmings to the remaining portion of dough, then roll it out, trim, and divide it into 8 strips. Also place cherries and seal the edges.

You should end up with 15 tubes in total. Place the tubes on a baking sheet lined with parchment paper, spaced apart from each other. Bake in a preheated oven at 180 °C for 30 minutes.

Whisk the cream with sugar.

Assemble the cake. Place five cooled tubes in a single layer on a plate. Generously spread the tubes with whipped cream. For the next layer, place four tubes, then three, two, and one. Spread each layer with cream.

Also, coat the entire assembled cake with the cream on all sides. You can decorate the top of the cake with grated chocolate.

Leave the cake in the refrigerator for soaking for at least 6 hours. The “Shapka Guguce” cake is ready.
