Cake
Description
Homemade baking for tea. Making the “Shantili” cake is quite simple; a step‑by‑step guide will show you how to do it, the main thing is to have the desire. It's best to use wild berries—raspberries, strawberries, blackberries—but the cake is just as tasty with other combinations.
Instructions
- 1
Step 1

Prepare the ingredients for making the cake.
- 2
Step 2

First, preheat the oven to 175 degrees and begin preparing the dough; for this, melt the butter.
- 3
Step 3

Place the eggs, sugar, and vanilla sugar in a mixing bowl.
- 4
Step 4

Whisk for 7–10 minutes until it turns pale and its volume increases about fourfold.
- 5
Step 5

Carefully, in small portions, fold in the flour.
- 6
Step 6

Carefully pour in the melted butter and stir until the dough is smooth.
- 7
Step 7

Spread the dough into a pan (23 cm diameter); if the pan is not silicone, it's better to grease it with vegetable oil. Bake for 20 minutes, checking doneness with a toothpick.
- 8
Step 8

Cool the baked sponge cake to room temperature and cut it into three layers.
- 9
Step 9

If you whip rustic cream plain, it will quickly turn into butter, so it should be diluted with milk in a 2:1 ratio. Add milk to the cream and whip on low speed.
- 10
Step 10

Whisk until foamy, add vanilla and half of the powdered sugar.
- 11
Step 11

Whip the cream until the mixer leaves characteristic marks.
- 12
Step 12

In another mixing bowl, place the cream cheese and add the remaining powdered sugar.
- 13
Step 13

Whisk the cream cheese until fluffy.
- 14
Step 14

Transfer the cream cheese to the cream.
- 15
Step 15

And beat it again; the creamy mixture should be dense yet fluffy.
- 16
Step 16

Spread a layer of cream on the cake base, sprinkle with chopped berries.
- 17
Step 17

Cover with the second layer and spread a layer of cream.
- 18
Step 18

Add another layer of berries.
- 19
Step 19

Cover with the third layer.
- 20
Step 20

Spread the remaining cream over the surface of the cake layer and the sides, and beautifully arrange berries and cherries on top. If desired, the sides of the cake can be sprinkled with almond flakes. This is not a cake – it’s bliss. The delicate whipped cream combined with berries is wonderfully tasty and so summery!
