Step 1

1. First, prepare the dough for the layers. Mix butter, vanilla, and sugar. Incorporate the eggs. I add the eggs one at a time to achieve a smooth, lump-free mixture. Add honey and beat the resulting mixture with a mixer at medium speed.

2. Mix the flour, baking powder, and milk, then add to the mixture from the first step.

3. Divide the resulting dough into two equal parts. Add cocoa to the second part and mix thoroughly.

4. Place the dough into greased baking pans of the same diameter and bake in a preheated oven at 180 degrees Celsius for 20–25 minutes. Check the cake's doneness with a toothpick—insert it into the center of the cake, and if it comes out dry, the cake is ready. If you don't have two identical pans, bake one cake first, then the second.

5. Let the cake layers cool completely, then remove them from the pan. Do not attempt to remove the sponge cakes while hot, as you will break them and risk burning yourself. Cut each cake layer into three parts, as shown in the photo.

6. Assemble 2 layers, alternating cake layers by color.

7. Now prepare the cream. Beat half of the sugar with the eggs, carefully pour in 250 ml of milk, then gradually sift in the flour in a thin stream, continuing to beat the mixture at low speed. The mixture should be smooth and lump-free.

8. Mix the remaining milk with vanilla and the remaining sugar, then place it on the stove. Stir constantly and bring the mixture to a boil. Add the first portion of the cream to the boiling mixture and continue cooking the cream over low heat, stirring constantly. Remove the thickened cream from the heat and let it cool. Note – the cream will thicken further as it cools, so do not overcook!

9. Soften the butter at room temperature, then beat it with a mixer.

10. When the cream has cooled, add the softened butter and beat well with a mixer.

11. Add sour cream to the resulting cream and beat again.

12. Generously spread the resulting cream between the assembled cake layers. Place one layer on top of the other.
