Separate the egg whites from the yolks. Beat the whites until stiff peaks form. While continuing to beat, gradually add 1 cup of sugar, then add the egg yolks one at a time. It's best to use a mixer. Then, using a wooden spatula (spoon), gently fold in cocoa, flour (gradually), and baking soda neutralized with lemon juice. Line a baking pan with parchment paper, grease it with butter, and pour in the batter. Bake at 180°C (356°F) for about 40 minutes. Check for doneness with a toothpick or matchstick.

The cake turns out very porous and airy after baking.

We let the baked cake cool and cut it in half. We use the bottom part as the base for the cake. The second part is cut into cubes with sides of about 3 cm.

We prepare the cream for our cake. Beat the sour cream for about 4 minutes, then gradually add half a cup of sugar and continue beating until the sugar dissolves completely. Those who prefer sweeter cream can add more sugar.

Now we need to spread the cream on several layers of our sponge cake. Place the whole cake layer we set aside onto a plate. Pour part of the cream over it and sprinkle with some nuts and fruits.

The second layer is made of biscuit pieces, which are also covered with cream and sprinkled with nuts and fruits. Just as with the second layer, form a tower using the biscuit pieces.

Doing everything the same as with the second layer, shape the biscuit pieces into a tower.

Let's prepare the icing. Mix 6 tablespoons of cocoa with 6 tablespoons of sugar and 4 tablespoons of milk, then cook over low heat, stirring constantly. Add 100 g of soft butter and immediately turn off the heat. Pour this icing over our cake and let it sit for some time to soak. Our Sancho Pancho cake is ready!
