
Cake with frozen berries
Description
You can serve such an appetizing cake even for a birthday or tie it to another holiday, or you can simply treat your loved ones to it at dinner, gathering everyone for tea with dessert. The main thing is to decorate the cake only when serving. The bake is ready. Serve at the table.

Prepare the listed ingredients. You can use sour cream of any fat content, and any berries.

Crack the chicken eggs into the food processor bowl or a tall mixer bowl. Add granulated sugar and salt, and beat on the highest speed for about 4–5 minutes until light and fluffy.

Add the wheat flour and gently fold it into the mixture with a silicone spatula or a whisk.

Grease the baking tin with neutral vegetable oil or butter. Pour the sponge batter into it. If you use a narrow tin, the layer will come out tall, and vice versa. My tin is 20 cm in diameter. The cake will be tall.

Preheat the oven to 180 degrees and bake the sponge cake in it for about 20–25 minutes; check doneness with a long wooden skewer — it should come out dry. Remove the pan with the sponge cake and lay it on its side so it does not collapse. Let cool.

After the sponge cake has cooled, beat sour cream of any fat content with sugar and a thickener for sour cream or for cream for 3–5 minutes.

Cut the sponge cake into three parts. On the first layer, spread one third of the sour cream and add the berries. If using cherries, pit them.

Assemble the whole cake in this way and refrigerate it to soak for 1–2 hours. Decorate the dessert with frozen berries, flowers, and fresh mint leaves. Only decorate the cake when serving; otherwise the berries will release juice and the dessert will look unappealing.
