Description

We are preparing a mousse cake, no baking required. You will need fresh berries and fruits, which can be mixed to your liking. Making this dessert is quite simple, but you need to follow a certain sequence. I'm sharing my recipe with step-by-step details.

    Prepare the ingredients.

    Grind the cookies in a blender into fine crumbs.

    Melt the butter, add it to the dough, and knead.

    Prepare a 20 cm diameter pastry ring as follows: place it on a flat surface, such as a cutting board, wrap it tightly with plastic wrap on the outside, and preferably line the inner edge with an acetate strip.

    Place the mixture of crumbs and butter into the bottom of the prepared pan, press firmly, and put into the freezer.

    Pour water into a saucepan, add black currants and sugar, bring to a boil, and cook for a few minutes until the berries soften.

    Soak the gelatin according to the instructions on the package.

    Strain the currant syrup, mash the berries, and do not discard the pulp—it can be added, for example, to yogurt.

    Dissolve the gelatin in blackcurrant syrup.

    Heat until the gelatin dissolves. If the gelatin does not dissolve well, you can strain it through a sieve and cool.

    Beat mascarpone with vanilla sugar and half of the powdered sugar using a mixer.

    Beat the cream into a fluffy foam with the remaining powdered sugar.

    Combine the whipped mascarpone, whipped cream, and pour in the gelatin mixture with blackcurrant syrup.
