Description
Perfectly pairs with tea and coffee. Let the finished cake soak in the refrigerator for 3-4 hours, or preferably overnight, so the layers become tender and soft. If desired, you can add nuts, dried apricots, raisins, sesame seeds, sunflower seeds, or chocolate to the cake. When assembling the cake, sprinkle your favorite filling over the cream. Don't worry about whether your cake will soak properly—the recipe is designed with that in mind: the layers are super thin, and the cream is incredibly delicious and thick. Decorate the top with a chocolate drizzle. Serve cooled or slightly warm.

Crack 2 eggs into a saucepan, add 200 grams of sugar, and mix in honey. Place the saucepan over a water bath and gently heat all the ingredients, stirring slightly with a whisk.

Add 100 grams of butter and baking soda. Mix the mixture until smooth.

Continue heating over a water bath, but there is no need to stir the mixture anymore.

The mixture should increase in volume and acquire a slightly golden color.

Remove the pot from the heat and add the sifted flour in small portions, stirring with a spoon, as the dough will be hot.
