
Lime Cake
Description
The cake is no-bake. First, crush the cookies, mix them with melted butter, and press the mixture into a pan. Firmly compact it and refrigerate for half an hour. Meanwhile, squeeze the lime juice, mix it with sour cream, cheese, sugar, and vanilla, and whisk thoroughly. Add dissolved gelatin, pour the mixture over the cookie base in the pan, and refrigerate for 2 hours. Next, dissolve the jelly, pour it over the white layer in the pan, and return the cake to the refrigerator for another 5 hours. Then remove the sides of the springform pan, decorate the cake with lime slices and mint leaves, and serve.

Soak the gelatin in water for 10 minutes, then heat over low heat until completely dissolved. Cool.

Cut the lime into three parts, set the middle part aside for decoration, and squeeze the juice from the side pieces. Add sour cream, cream cheese, sugar, vanilla sugar to the juice, and whisk well. Without stopping, pour in the gelatin. Pour the resulting mixture into the mold over the cookies and refrigerate for 2 hours.

Dissolve the jelly according to the instructions, reducing the amount of water, and pour it into the mold over the white layer. Refrigerate for 5 hours to set completely. Then remove the edges of the springform pan.

Slice the remaining lime into thin rounds, sprinkle them with sugar, and use them to decorate the cake. You can also add fresh mint leaves. Cut into portions and serve.
