
Cake with whipped cream frosting
Description
What flavor combination for a dessert is considered simple, familiar, and luxurious all at once? Right—strawberries with cream. And here I've used it to the fullest. Be sure to read about it too. Serve cooled or slightly warm.

Start preparation with the sponge cake batter. Separate the yolks from the egg whites.

Then beat the yolks with half of the regular sugar and all of the vanilla sugar for the dough.

And beat the separated egg whites until stiff peaks form.

Add 1/3 of the egg whites to the yolks. Gently mix the mixture with a spatula.

Then add the sifted flour. Mix. Add the remaining egg whites. Knead the dough with a spatula from top to bottom.

Line a removable round baking pan with parchment paper.

Next, pour in the batter and smooth it out. Bake the sponge cake at 180 degrees for 30 minutes.

Leave the finished sponge cake under a towel at room temperature for 8–12 hours so it doesn't get soggy during assembly. Its texture will be light and airy.

Now make the meringues. Beat the egg whites with regular and vanilla sugar.

Line a baking sheet with parchment paper. Draw a circle on it the same diameter as the cake. Place the meringue mixture on it.

Bake the meringue in a preheated oven at 180 degrees for 15 minutes.

Trim the excess edges from the meringue. Leave it to cool.

Cut the sponge cake into 3 equal layers.

Make the soaking syrup. Slice the strawberries.

Transfer the berries to a saucepan. Add water and sugar to them.

Bring the strawberries to a boil. Skim off the foam. Simmer the syrup for another 5 minutes over medium heat.

Then mash the boiled berries into a puree.

Then strain the purée through a sieve. Leave only the syrup. Let it cool.

Slice the strawberries into wedges. Reserve a couple of berries for garnish.

Make the cream. Whip cold cream at low speed, gradually increasing the speed. When the speed reaches medium, add powdered sugar and vanilla sugar. Increase the speed to maximum and whip until the cream reaches a stable consistency.

Assemble the cake. Brush the bottom biscuit with syrup.

Then add the cream and strawberries. Sprinkle everything with powdered sugar.
