
Plum Cake
Description
Delicious baked treat for the whole family. Even if you're not usually fond of dried fruits, you won't be able to resist a slice of this cake. The cake is based on a chocolate sponge with soaked prunes added. You can drizzle the cake with chocolate—it will only make it more delicious. Serve the dessert cooled down. The baked good is ready. Serve at the table.

Add finely chopped prunes to a saucepan, pour in rum, and add 1 tablespoon of sugar. Simmer over low heat until most of the liquid has evaporated. Then remove the saucepan from the heat and let it cool.

Grease the baking pan with a piece of butter, sprinkle with cocoa powder, shake the pan, then turn it upside down to remove excess.

Melt the chocolate with the butter in a double boiler, then remove from heat and add the prunes and the remaining rum from the saucepan.

Separate the yolks from the whites. Beat the yolks and add them in a thin stream to the chocolate mixture.

In a separate bowl, beat the egg whites with a pinch of salt, then gradually add sugar one tablespoon at a time, continuing to beat.

Add 1/3 of the egg whites to the main mixture and stir, then add the remaining egg whites in two batches. Mix thoroughly until no streaks remain.

Pour the batter into a prepared pan and bake in a preheated oven at 165 degrees for 45 minutes. Remove the finished cake, let it cool, then cut into pieces.
