Cake with a bow

Description

Perfect for serving with tea and coffee. You can bake the sponge cake layers yourself if you have time. However, I decided to speed up the process and bought ready-made ones from the store. In the nearest supermarket, these cake layers turned out to be very affordable and quite tasty. That's why I often use store-bought dough options.

    Prepare the cream. Soak the gelatin in 50 ml of cold water. After 20 minutes, place it over a water bath. Once melted, remove from heat. Whip the cream and cottage cheese with sugar. Add the cooled gelatin and vanilla sugar.

    We'll put the cream in the refrigerator, and in the meantime, let's start decorating. Melt the chocolate using a double boiler. Cut a strip from parchment paper, the length of the cake layers' circumference. Pour the melted chocolate into a small plastic bag with a tiny hole. Cut the strip in half and draw freeform patterns on each half. Place the parchment paper with the chocolate designs into the refrigerator.

    Soak the cake layers with the cottage cheese cream. Generously spread the cream on the sides of the cake. Whip the egg white. Combine sugar with one tablespoon of water and cook into a syrup. Mix the whipped egg white with the syrup (it can be hot). Use this mixture to coat the sides of the cake so that the chocolate patterns will hold. Take out the patterns and attach them around the cake's circumference. Carefully peel off the paper.

    Cut strips of parchment paper to the desired bow size. Spread chocolate on them and connect the ends. Place in the refrigerator to set.

    Remove the chocolate strips from the parchment paper. Place them in the center of the cake to form a bow. Decorate with kiwi.
