
Banana Layer Cake
Description
Delicious baked goods for the whole family. I use a 16 cm (6 inch) baking pan. The sponge layers must be soaked, so you can make the soaking syrup from my recipe or use any favorite syrup of yours. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients for making the sponge cake.

Beat all the eggs into a large bowl and add a pinch of salt.

Beat these ingredients with a mixer until foam forms.

Continuing to whisk, add the sugar a little at a time and whisk everything together until the mixture has noticeably increased in volume.

In a separate dry bowl, sift all the flour and add 2 tbsp. cocoa.

Whisk all these ingredients together until smooth and homogeneous.

Add the dry flour mixture to the whipped egg mixture and gently, slowly fold in with a spatula until fully combined and you have a uniform, airy batter.

My pan is 16 cm in diameter. Line the bottom of the baking pan with baking parchment and spread in all the chocolate batter. Place the filled pan in an oven that has already been preheated to 180°C for 40 minutes.

Cool the finished sponge cake completely on a wire rack. My sponge cake turned out about 10 cm high.

Cut the fully cooled sponge cake into three equal layers, using whichever method you find most convenient.

Prepare all the ingredients for layering the sponge cake layers and for frosting the finished cake. The butter will be used to make the frosting for the cake, so it should be as soft as possible by the time you use it.

First, prepare the cream for layering. Pour cold heavy cream into a large bowl and beat with a mixer until soft peaks form.

Add 60 grams of powdered sugar and mix it into the whipped cream with a mixer.

Add 450 grams of cream cheese.

Beat all these ingredients until you obtain a light, homogeneous cream.

Now prepare the soaking syrup for the sponge cake layers. Place 50 grams of sugar in a bowl, add water, and 1/2 tbsp cocoa.

Over low heat, bring to a boil and, whisking continuously, wait until the sugar has completely dissolved.

Peel the bananas and slice them into thin rounds.

Place the first sponge cake layer in the bottom of a parchment-lined baking pan and brush it with the prepared chocolate soaking syrup using a silicone brush.

Spread approximately 200 grams of cream in a layer on the sponge cake and arrange half of the banana slices on top.

Spread another approximately 100 grams of cream over the banana layer. Then place the second sponge cake on top, soak it, add cream, a banana layer, cream, and the third sponge cake. Only soak the third sponge cake. Put the mold with the assembled cake in the refrigerator overnight to soak through.

In the morning, remove the soaked cake from the pan.

Prepare the leveling cream. Place soft butter in a large bowl and add 40 grams of powdered sugar.

With a mixer, beat the butter with powdered sugar until smooth and homogeneous.

Add 150 grams of cream cheese.

My youngest child really loves cats, so I decorated the cake with gingerbread cookies shaped like a cat; you can decorate the cake however you like.
