Description
Homemade treats for tea. Many of us are amazed by how those beautiful cakes in display cases are made. Mostly, it's fondant, but also the skill of the bakers. Making a fish cake will take time and patience. It's difficult to shape intricate details from fondant the first time, but this recipe doesn't require any complex details. See the recipe below.

First, the dough. Nothing complicated, just a regular sponge cake: beat the eggs with sugar, add flour, baking powder, and cocoa. Mix, bake, and let our cake layer cool down.

Cut the cake into 3x3 cm cubes. Soak them: dilute the jam with warm water, remove the cherries beforehand.

Whip the sour cream with sugar and vanilla. The higher the fat content of the sour cream, the better.

Assemble the fish: dip the cubes into the cream separately, not all at once—otherwise it will turn into mush. Layer gradually.

Place nuts, candied fruits, and other filling ingredients between the cubes. Put in the refrigerator for 15-20 minutes to let everything soak.

Meanwhile, prepare the buttercream: beat the condensed milk with the butter. Spread the cream over the chilled cake and return it to the refrigerator until the cream sets.

Roll out the fondant. I buy ready-made. Make small circles for the scales.

Place the fish with the scale side up.

Now the head.

Cut out the tail and fins from the fondant.

Attach to the body.

Dilute food coloring in water according to the instructions and add condurin for shine. Dye the fish.

Separately make the sponges and eyes. Color them as well and attach.
